In 1977, brothers Enrico and Nino Giacalone, made their journey from Sicily to Shreveport to continue their culinary apprenticeship under family members, Giuseppe Brucia and Vincent Campanella. The cousins owned and operated the family owned restaurant, Firenze, a well-established Continental cuisine eatery.

Chef Ben Monzon offers Chianti patrons the versatility in the menu they have become partial to over the years. He has accomplished and perfected the cooking aptitude of grilling, pastas, appetizers, the unique Italian cuisine, and the delicate balance of good sauting. Sauting is a cooking method that browns the food while preserving its texture, moisture and flavor.

Along with Dorsey's vocals, he plays saxophone and is accompanied by Leroy Hawthorn who plays base guitar and piano. Winston Hall is a Shreveport-based piano entertainer know for this raucous energy, soulful ballads, improvisation, and eclectic musical style.
