Best to prep the lamb the night before by mixing the oil, garlic, rosemary, oregano and thyme and rub it in the meat. Add salt and pepper. Place in a zip lock bag and remove all the air and let the lamb sit in the rub and oil overnight in the refrigerator. If you do not have the time to allow the marinade to soak in, then allow the lamb to sit in the rub as the meat comes to room temperature about 45 min.
Corned beef, brussel sprouts, and cabbage

Place corn beef in a large crock pot adding seasoning packet (or see seasoning below). Cover the corn beef in water and chicken broth. If you don't have chicken broth, 4 cups of water will do. Depending on the size of your crock pot, this amount of water should just cover the corn beef- if not add more water.
