Using a combination of water and Methylene Chloride, a Food and Drug Administration (FDA) authorized solvent, the caffeine is extracted from the beans. This coffee is virtually caffeine free. Using water only, caffeine and some flavor and aroma elements are drawn out of the coffee. The water is then filtered which extracts the caffeine, and then the flavor compounds are returned to the beans.
