Raising kids with allergies, you learn first hand the importance of reading the label, knowing what you're eating and learning that gluten free, dairy free and even vegan doesn't always mean healthy. We decided that we were going to change that, working with fresh, organic, low or no sugar, from scratch and always all natural.

Perfectly made choux pastry, filled with cream and covered with tempered chocolate, what's not to like? 30% whole wheat, wheat berries, 80% hydration, and a lot of time makes a lighter crust and great flavors. All white wheat flour, water, salt, and our own sourdough, add a long fermentation period and you get a sweet bread with sour notes (vegan).
