Chef Juan Hernandez has extensive culinary arts experience. He started cooking at a young age as a native of Spain. In 1986, he moved to New Orleans where he began his culinary education at Delgado Community College, but chose to perfect his culinary skills with hands-on experience, learning the trade at several upscale New Orleans restaurants and hotels such as Intercontinental Hotel, Petroleum Club, Louis the XIV, the Hilton Hotel and more.

Later, he moved back to Spain expand his culinary skills by working at prestigious hotels like The Palace in Madrid and catering companies that catered to celebrities and members of the royal family. In 2001, he returned to New Orleans ready to open his own restaurant, Madrid. He was delighted to serve his delicious cuisine to his loyal customers.

Served on wheat or white bread. Egg Sandwichs - On croissant, English muffin or Toast, and your choice cheese and your choices of the following sides: bacon, Canadian bacon, chorizo, ham or turkey. Organic Baby Spinach - Blue cheese, strawberry, pecans, red onions, served with balsamic vinaigrette.
