In the year 2000, we set out to fill a niche in Carbondale and create a business that serves our community by providing a gathering place for friends, families, workers and volunteers and supporting hundreds of non-profits that serve our valley and world. We also, as it happens, built a cafe that serves gourmet international cuisine at a fast-food pace.

John Nieslanik, the founder of Nieslanik Beef, grew up as one of 12 siblings on a ranch in Spring Valley near Carbondale, Colorado. In 1957, after returning from the Korean War, he began buying land on East Mesa in Carbondale. There he would start his own ranching operation. In 1960, John purchased the beautiful 166 acres of fertile land that has since become the home base of Nieslanik Beef.

Co-owners Julie and Nelson Oldham are re-upping their commitment to the community they value so highly. To express their gratitude over the next 52 weeks, Dos Gringos began an $11,000 giving campaign in the fall of 2019 for the 52 weeks leading up until the 20th anniversary on 11/11/20.
While our cash donations unfortunately have been suspended due to the pandemic this spring, every week DOS will continue to spend advertising dollars to spotlight one of the many non-profits in the Roaring Fork Valley that do such admirable work.
