Our shop in historic Kingston, NY (the first capital of NY), is considered to be in midtown, the heart of the business community, including city hall, hospitals, medical and support offices, the DEP and other professionals and entrepreneurs. The space was renovated back to its turn-of-the-century, 1906 beauty -- tin ceiling, fireplace, wainscoting, tiled floor, school house lights -- and was modeled after a European coffee bar.
Coffee has always been an important part of my life. Growing up in an Italian family, coffee was brewed many times each day, but I particularly looked forward to the evening coffee as our family gathered around the table after dinner. I remember feeling that I had experienced a rite of passage when, at the age of seven, my father first set my own place at the table.

At Monkey Joe Roasting Company our reason to be, is roasting single-origin, specialty-grade coffee. This means that we purchase only the highest, specialty grade, green coffee beans available, from all over the world. Coffee roasting is done in small batches at the roast profile that will showcase each coffee's most distinctive aroma and flavor.

Coffee does not keep better refrigerated. It is best stored in a cool, dry place, out of the sun, in an airtight container - moisture, heat and oxygen are its enemy. Freezing beans if not being used quickly is controversial. If you must freeze, place beans in a Ziploc freezer bag and squeeze as much air (oxygen) as possible out of it before sealing.
