Gilla Brewing Company was founded by Brad Andersen, Alex Shillings, and Derek Stewart, all homebrewers and craft beer enthusiasts that shared a dream. Proudly serving as Ascension Parish's first brewery, we specialize in fruited sours, New England IPA's, and pastry stouts. As a nano-brewery, our small batch sizes allow us to constantly try new and exciting things with the beers we brew, and also means there is something new and different on tap when you visit our taproom.

You can decorate your event area as long as any decor does not harm the walls or floor for "private events only". Food: We do not have a kitchen, but we will have food trucks or pop ups scheduled during the week and weekends. If you would like your private event catered we can assist with this as well.
The Owners

Alex's dad is the namesake of Gilla, and his family is very involved, including his mom, brother, wife and cousin. He enjoys co-owning the brewery because they are all able to pull enough weight so they are able to balance life outside of the brewery. Alex enjoys the idea of working for himself and doing something he enjoys is something he has always dreamed of.
What Does "Gilla" Mean

When trying to settle on a name for the first brewery in Ascension Parish, we wanted a name that not only represented our style and personality but also connected us to the community. Urban Dictionary defines "Gilla" as "something over the top, " which perfectly describes the strong, bold flavors you will find in our taproom.
