In 2019, Gypsy Javas became a reality for us, Mindy and John Collins. We chose Pueblo, CO because of family, the city's small-town "feel, " culture and art scene. Mindy is a native Coloradan and graduate of the Culinary School of the Rockies, while John has 30 years of professional experience in the hospitality industry.

This combination is evident from the moment you step inside Gypsy Javas. Gypsy Javas stellar customer service, impeccable cleanliness, fresh-baked pastries, specially prepared menu items, coffee specialties and cozy ambiance are worth a visit or two or many more. Sunny days guarantee that our patio will be full of guests enjoying a drink or treat.

I was looking for a unique coffee shop to go on about and work on some of my educational courses. I looked up Gypsy Javas and their reviews and menu selection sold me. I had their charcoal mocha (which I didn't even know that was possible), coming from a former coffee barista. Tried their Morning Birdie breakfast sandwich and it was delicious. Highly recommend this place to anyone, especially if you're looking for a friendly atmosphere and great customer service!

They have a rustic looking decor. I stopped for a takeout coffee and breakfast. Ordered the gypsy mocha with green chili, the quiche and a lemon poppyseed muffin. I loved the mocha. The green chili in the mocha was a perfect touch of spice. The quiche was decent and quite filling. The pesto sauce with it was absolutely delicious. The muffin was ok. I am not one for a sweet tooth, but it def needed more lemon in it. Overall it's ok. The inside doesn't have much lighting so would recommend sitting outside.

Needed a pick me up on the way to denver and found this little gem! Worth the quick trip off the highway ♡ The ladies running the front were helpful and friendly. I went with their pressed cold coffee and I was not disappointed! Fantastic coffee!!

Look, I'm not a coffee shop kinda guy, but this little place was awesome. Super friendly, great atmosphere, great coffee. Their house baked goods are excellent too, loved the coffee cake! Really interesting decor, gives a victorian industrial feel almost, with a bit of a twist. If I'm ever going back through Pueblo, I'll be stopping by again!

Excellent service; freshly made baked goods which has half of the display case dedicated to gluten free options; vegan/ vegetarian food options for breakfast or lunch; variety of teas and coffee flavorings . My fave of faves is the cauliflower wrap with a Mediterranean flavor, add feta and have it pressed for extra flavoring. Look for specialty drinks such as Tumeric or charcoal lattes

Wonderful experience every time I’m here. The staff is amazing and always helpful. All of their beverages are made with care and never disappoints. Awesome selection of sandwiches and bakery items if you’re hungry. An excellent place to sit down for study time or hang out with friends. Try their turmeric latte 😉

Everything was amazing! I wish I could’ve tried some of the pastries but I was too full. They looked amazing so I would come prepared to try them if you are feeling adventurous. I can’t have caffeine so I usually have to settle when the group goes to coffee shop. However I ordered the hot cocoa and it’s the best hot chocolate I’ve ever ordered out! Not too sweet and very chocolatey. I also loved the latte art, it made it very special

Well worth pulling off I-25 for a spot of awesome classic java, but the LATTE ART is literall ART. See pictures. Currently serving out of to-go cups but that doesn’t stop them from having the best latte art I’ve seen and I make a point to stop at as many coffee shops as possible when vacationing. Hot chocolate was latte style and tasted like pure melted chocolate chips. Gorgeous. They also had super cool seasonal syrups that I forgot to photo, like butterbeer.

It was an accident we found this little gem. We had the rose latte with a couple of bagels. The coffee was absolutely delicious. I could not have asked for anything more. The sandwiches were not as good as I would have expected given the coffee, but the bagel it was on was very good. I had salmon on my bagel and although the flavor was good I wish there was more of the spread. All together it was an enjoyable experience. Cute little building too.
